Ingredients:

  • 225g (8oz) softened butter
  • 225g (8oz) caster sugar
  • 4 large eggs
  • 150g (5oz) ground almonds
  • 225g (8oz) self-raising flour
  • 1 teaspoon black treacle
  • 2 teaspoons almond essence
  • 2 tablespoons of milk
  • 2 tablespoons of apricot jam
  • 225g (8oz) currants
  • Zest of 1 lemon
  • 75g (3oz) glacé cherries, halved
  • 150g (5oz) marzipan

Instructions:

  1. Preheat the oven to 180°C/350°F/Gas Mark 4.
  2. Cream the butter and sugar together until light and fluffy.
  3. Beat in the eggs, one at a time.
  4. Mix in the ground almonds, self-raising flour, black treacle, almond essence and milk.
  5. Spoon the mixture into a greased and lined 20cm (8 inch) round cake tin.
  6. Bake in preheated oven for 1 hour, or until a skewer inserted in the middle comes out clean.
  7. Leave to cool in the tin for 10 minutes, then turn out onto a wire rack to cool completely.
  8. Mix the apricot jam with a little water in a small pan and heat until it is melted.
  9. Brush the cooled cake with the melted jam, then sprinkle with the currants and lemon zest.
  10. Roll out the marzipan on a lightly floured surface and cut out a circle the same size as the top of the cake.
  11. Brush the marzipan with the melted jam and carefully place on top of the cake.
  12. Arrange the halved glacé cherries around the edge of the marzipan.
  13. Place the cake under a hot grill for a few minutes until the marzipan is golden brown.
