Ingredients

  • 50g of mixed dried fruit
  • 50g of sultanas

  • 50g of mixed peel

  • 50g of self-raising flour
  • 1/4 teaspoon of nutmeg

Instructions

Begin by preheating your oven to 160C (320F). Grease and line a small cake tin (around 20cm or 8 inches in diameter) with baking parchment.

Start by combining all the dried fruit in a bowl and mix together, then set aside. Now place the butter and sugar into a large bowl and beat together until pale and creamy. Next add the beaten egg and beat until fully combined.

Add the flour, nutmeg and cinnamon to the bowl and mix until fully incorporated. Now add the brandy (if using) and stir until combined. Lastly, add the dried fruit to the bowl and mix until all the fruit is fully coated in the mixture.

Spoon the mixture into the prepared tin and level the top. Place in the oven and bake for around 40 minutes until golden brown and a skewer comes out clean when inserted into the centre. Once cooked, leave to cool in the tin for 10 minutes before turning out onto a wire rack to cool completely.

Once cooled, the cake can be decorated with glacé cherries, mixed peel and a dusting of icing sugar if desired.
