  • 1/2 cup of chopped pecans

Instructions

Preheat your oven to 350 degrees Fahrenheit. Grease a 9x13 inch baking pan with butter or cooking spray. In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, chili powder, cumin, garlic powder, salt and cayenne pepper. Set aside.

In a large bowl, mix together the oil and sugar until combined. Add in the eggs and mix until combined. Add in the buttermilk and mix until combined. Add the dry ingredients to the wet ingredients and mix until just combined. Do not overmix.

Pour the batter into the prepared baking pan. Spread the crushed pineapple over the top of the batter. In a separate bowl, mix together the melted butter, coconut, and pecans. Sprinkle the coconut mixture over the top of the pineapple. Bake in the preheated oven for 30 minutes, or until a toothpick inserted into the center of the cake comes out clean.
