Ingredients



For the biscuit base:

- 250g digestive biscuits
- 140g butter, melted

For the jelly layers:

- 100g strawberry jelly
- 100g raspberry jelly
- 100g orange jelly
- 400ml boiling water
- 400ml cold water

For the cream layer:

- 400ml double cream
- 2 tablespoons icing sugar
- 1 teaspoon vanilla essence

For the stained-glass effect:

- 100g assorted fruit candies, chopped

Instructions



1. Start by preheating your oven to 180°C (350°F). Grease and line a round 20cm (8in) cake pan.

2. In a medium bowl, mix together the digestive biscuits and melted butter. Press the mixture into the prepared pan, making sure it is firmly packed. Bake for 10 minutes, then remove from the oven and leave to cool.

3. In a medium bowl, mix together the jelly powder and boiling water until all the lumps have dissolved. Add the cold water and stir until combined.

4. Pour a third of the jelly mixture over the biscuit base and place in the fridge until the jelly has set.

5. To make the cream layer, whip the double cream until it is light and fluffy. Add the icing sugar and vanilla essence and continue to whip until combined.

6. Spread the cream over the set jelly layer and place in the fridge to set.

7. Repeat steps 4-6 with the remaining jelly mixtures and cream, making sure to leave the final layer of cream until last.

8. Finally, sprinkle the chopped fruit candies over the top of the cream layer to give a stained-glass effect. Place in the fridge until ready to serve.
