Instructions

  1. In a medium bowl, whisk together the flour, milk, eggs, 3 tablespoons sugar, baking powder, salt, 2 tablespoons melted butter, cinnamon, ginger and cardamom until combined.
  2. Heat a large non-stick skillet over medium heat and lightly grease with butter or cooking spray. Pour in the crepe batter and tilt the pan to spread it evenly. Cook until the bottom is lightly golden brown, about 1 minute. Flip and cook the other side until golden brown, about 30 seconds.
  3. Transfer the crepe to a plate and repeat with the remaining batter. Let the crepes cool completely.
  4. In a medium saucepan, whisk together the Thai milk tea, 1/4 cup sugar, cornstarch, and 2 tablespoons butter. Cook over medium heat, whisking constantly, until the mixture thickens, about 5 minutes.
  5. Remove from the heat and whisk in the heavy cream and vanilla extract. Let the custard cool to room temperature.
  6. To assemble the cake, place one crepe on a plate and spread with a thin layer of the custard. Top with another crepe and spread with a thin layer of custard. Repeat until all the crepes and custard have been used. Top with the toasted sesame seeds, if desired.
