Stephanie Alexander's Carrot Cake Recipe

Ingredients
- 3 cups self-raising flour

Instructions
Preheat your oven to 180°C (356°F). Grease and line a 25 cm (10 inch) springform tin with baking paper. In a medium bowl, sift together the flour, cinnamon, nutmeg, baking powder, baking soda, and salt. Set aside.
In a large bowl, whisk together the oil, eggs, and sugar until well combined. Stir in the grated carrots, walnuts, pineapple, raisins, and orange zest. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
Pour the batter into the prepared tin and bake for 45 - 50 minutes, or until a skewer inserted into the centre of the cake comes out clean. Remove the cake from the oven and allow to cool completely before turning out of the tin onto a wire rack.
Once the cake is cool, make the cream cheese frosting. Beat together 250 g (1 cup) of softened butter and 500 g (2 cups) of cream cheese until creamy and smooth. Gradually add 2 cups of icing sugar and beat until light and fluffy. Add 1 teaspoon of vanilla extract and beat until combined.
Spread the cream cheese frosting over the cooled cake and decorate with walnuts and grated carrots, if desired. Serve and enjoy!
