Christmas is a time of year that brings joy and family together, and what better way to celebrate the holiday season than with a delicious festive cake. This Stork Light Christmas Cake is sure to be a hit and it's so easy to make. It is light, fluffy and full of festive flavour. The cake is made with Stork margarine, which gives it a light and fluffy texture, and it’s filled with all the classic Christmas spices and flavours. It’s sure to be a hit with your family and friends this festive season.

Ingredients



- 250g Stork Margarine
- 200g caster sugar
- 4 large free-range eggs
- 300g self-raising flour
- 2 tsp ground cinnamon
- 2 tsp mixed spice
- 2tbsp cocoa powder
- 2tbsp golden syrup
- 100g sultanas
- 50g glacé cherries
- 2tbsp brandy
- 200g icing sugar
- Zest of one lemon
- Juice of one lemon

Instructions



1. Preheat your oven to 180°C and line a 20cm round springform cake tin with greaseproof paper.

2. In a large bowl, cream together the Stork margarine and caster sugar until light and fluffy.

3. Beat in the eggs, one at a time, until fully incorporated.

4. Sift in the self-raising flour, cinnamon, mixed spice and cocoa powder, and fold into the mixture until combined.

5. Stir in the golden syrup, sultanas, glacé cherries and brandy.

6. Pour the mixture into the prepared tin and bake for approximately 50 minutes, or until a skewer inserted into the middle of the cake comes out clean.

7. Once cooked, remove from the oven and leave to cool in the tin for 10 minutes, before transferring to a wire rack to cool completely.

8. To make the icing, sift the icing sugar into a bowl, add the lemon zest and juice, and mix together until combined.

9. Once the cake is cooled, spread the icing over the top and leave to set before serving.
