Ingredients



For the cake:
  • 2-1/2 cups all-purpose flour
  • 2 cups sugar
  • 3/4 cup cocoa powder
  • 2 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 2 eggs
  • 1 cup vegetable oil
  • 1 cup buttermilk
  • 2 tsp vanilla extract
  • 1 cup boiling water


For the chocolate mousse:
  • 2 cups heavy whipping cream
  • 2 cups semi-sweet chocolate chips
  • 1 tsp vanilla extract


For the chocolate ganache:
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy whipping cream

Instructions

Making the cake

Preheat oven to 350°F (175°C). Grease two 9-inch round cake pans and dust with cocoa powder. In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, baking powder and salt. Add eggs, vegetable oil, buttermilk and vanilla extract. Whisk until combined and no lumps remain. Gradually add boiling water, stirring until combined.

Divide batter evenly into prepared pans. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool for 10 minutes before removing from pans to cool completely.

Making the chocolate mousse

In a large bowl, beat heavy whipping cream until stiff peaks form. Melt chocolate chips in the microwave, stirring every 30 seconds until melted. Add melted chocolate and vanilla extract to the whipping cream and mix until combined.

Spread the mousse over one of the cake layers, then top with the second cake layer. Place in the refrigerator for 1 hour to set.

Making the chocolate ganache

Place chocolate chips and heavy whipping cream in a small saucepan over low heat. Stir constantly until chocolate is melted and mixture is combined. Pour over the top of the cake and spread out evenly. Place in the refrigerator for 30 minutes to set.
