Ingredients

  • 4 eggs
  • 250g of butter
  • 250g of sugar
  • 250g of self-raising flour
  • 2 teaspoon of baking powder
  • 1 teaspoon of vanilla extract
  • 3 tablespoons of jam
  • 200ml of double cream

Instructions

Preheat the oven to 180C/350F/Gas 4. Grease two 20cm/8in sandwich tins with butter and line the bases with baking parchment.

In a large bowl, beat the butter and sugar until pale and creamy. Gradually add the eggs, beating well between each addition. Add the vanilla extract, flour and baking powder and beat until everything is well combined. Divide the mixture evenly between the prepared tins and spread it out to the edges.

Bake in the preheated oven for 20–25 minutes or until golden-brown and the cakes are beginning to shrink away from the sides of the tin. Leave to cool in the tins for 5 minutes, then turn out onto a wire rack and leave to cool completely.

When the cakes are cold, spread one with the jam and the other with the cream. Sandwich the cakes together and dust with icing sugar. Serve in slices with a cup of tea.
