Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda

Instructions

Preheat oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.

In a medium bowl, sift together the flour, baking powder, baking soda, salt, cinnamon, nutmeg and ginger. Set aside.

In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Beat in the flour mixture alternately with the milk, mixing just until incorporated. Fold in the dried fruit and nuts.

Pour batter into prepared pan. Bake in preheated oven for 60 to 70 minutes, or until a toothpick inserted into the center of the loaf comes out clean. Allow to cool in pan for 10 minutes before turning out onto a wire rack to cool completely.
