Smith Island Cake Recipe With Duncan Hines

Ingredients
- 1 box Duncan Hines Yellow Cake Mix
- 1 cup vegetable oil
- 1/2 cup water
- 3 eggs
- 3 cups all-purpose flour
- 3/4 cup granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/2 cup butter, melted
- 2 cups confectioners' sugar
- 1 teaspoon vanilla extract
- 2 tablespoons milk
Instructions
1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9-inch round baking pans.
2. In a large bowl, mix together the cake mix, oil, water and eggs. Beat until smooth. Divide the batter between the two pans.
3. In a separate bowl, mix together the flour, sugar, baking powder, salt, cinnamon and nutmeg. Add the butter and mix until crumbly. Sprinkle the crumb mixture over the top of the cake batter in the pans.
4. Bake at 350 degrees F (175 degrees C) for 25 to 30 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool in the pans for 10 minutes, then turn out onto wire racks to cool completely.
5. To make the icing, mix together the confectioners' sugar, vanilla extract and milk in a bowl. Beat until smooth. Spread the icing between each layer of the cake and on top of the cake.
