Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup butter, softened
  • 3/4 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 2 cans (14 oz each) cherry pie filling
  • 1/2 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1/4 cup semi-sweet chocolate shavings

Instructions

Cake

Preheat oven to 350°F. Grease and flour two 9-inch round cake pans.

In a medium bowl, whisk together flour, cocoa powder, baking powder, baking soda and salt. Set aside.

In a large bowl, beat butter and granulated sugar until light and fluffy. Add eggs one at a time, beating after each addition. Beat in vanilla extract.

Add half of the flour mixture to the butter mixture and mix until just combined. Add sour cream and mix until just combined. Add remaining flour mixture and mix until just combined.

Divide batter between the two cake pans. Bake for 25 to 30 minutes, or until a toothpick inserted in the center comes out clean. Let cakes cool completely in the pans.

Filling and Topping

Place one of the cakes on a serving plate. Spread one can of cherry pie filling over the cake. Place remaining cake on top.

In a medium bowl, beat together heavy cream and powdered sugar until stiff peaks form. Spread cream over the top of the cake.

Spread remaining can of cherry pie filling over the top of the cake. Sprinkle with chocolate shavings. Serve immediately or refrigerate until ready to serve.
