Ingredients:

  • 1 package active dry yeast
  • 2/3 cup warm water
  • 1/4 cup granulated sugar
  • 2 teaspoons salt
  • 1/2 cup butter, melted
  • 2 eggs, beaten
  • 4 cups all-purpose flour
  • 1 (8 ounce) package cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground nutmeg
  • 3/4 cup chopped pecans, divided
  • 1/2 cup butter, melted
  • 2 tablespoons ground cinnamon
  • 1 cup confectioners' sugar
  • 1/4 teaspoon almond extract
  • 2 tablespoons milk

Instructions:

In a large bowl, dissolve the yeast in warm water. Add the sugar, salt, butter, eggs, and 2 cups of the flour. Beat until smooth. Add the remaining flour, 1/2 cup at a time, beating until the dough is stiff. Turn out onto a floured surface and knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour.

Meanwhile, in a medium bowl, beat the cream cheese, sugar, vanilla and nutmeg until smooth. Stir in 1/2 cup of the pecans. Set aside.

Punch the dough down and divide in half. On a floured surface, roll each half to a 12-in. x 8-in. rectangle. Spread half of the cream cheese mixture over each rectangle to within 1/2 in. of the edges. Roll up jelly-roll style, starting with a long side. Place on greased baking sheets. Pinch seams to seal. Cut several diagonal slits in the top. Cover and let rise until doubled, about 45 minutes.

Brush lightly with melted butter. In a small bowl, combine the cinnamon and remaining pecans; sprinkle over the loaves. Bake at 375° for 20-25 minutes or until golden brown. Remove from pans to wire racks to cool.

In a small bowl, combine the confectioners' sugar, almond extract, milk and enough water to achieve a glaze consistency. Drizzle over the loaves. Yield: 2 loaves (16 slices each).
