Ingredients
- 1/2 cup of heavy whipping cream
- 1/2 cup of mascarpone cheese
- 1/2 cup of powdered sugar
- 1/2 teaspoon of vanilla extract
- 1/2 cup of espresso
- 1/2 cup of Kahlua
- 1 package of ladyfingers
- 1/4 cup of cocoa powder
Instructions
Step 1: Make the Mascarpone Cream
In a large bowl, combine the heavy whipping cream, mascarpone cheese, and powdered sugar. Beat with an electric mixer on medium speed until light and fluffy. Add the vanilla extract and mix until fully incorporated. Set aside.
Step 2: Make the Espresso and Kahlua Syrup
In a small saucepan, combine the espresso and Kahlua. Heat over medium-low heat until the mixture is simmering, stirring occasionally. Reduce the heat to low and simmer for 10 minutes. Remove from the heat and allow to cool.
Step 3: Assemble the Cake
Take a 9-inch springform pan and line it with parchment paper. Arrange the ladyfingers along the bottom of the pan, breaking them in half as needed to fit. Pour the espresso and Kahlua syrup over the ladyfingers and spread evenly. Spread the mascarpone cream over the ladyfingers. Sprinkle the cocoa powder over the cream. Cover with plastic wrap and refrigerate for at least 4 hours, or overnight.
Step 4: Slice and Serve
When ready to serve, remove the cake from the refrigerator and carefully remove the sides of the springform pan. Slice the cake into wedges and serve. Enjoy!
