Ingredients
For the Cake:
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking powder
- 3/4 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup unsalted butter, room temperature
- 1 3/4 cups granulated sugar
- 4 large eggs, room temperature
- 1 tablespoon vanilla extract
- 1/2 teaspoon red food colouring
- 1 cup buttermilk, room temperature
For the Ganache:
- 1/2 cup heavy cream
- 8 ounces semi-sweet chocolate chips
For the Buttercream:
- 1 cup unsalted butter, room temperature
- 4 cups powdered sugar
- 1 tablespoon vanilla extract
- 3-4 tablespoons heavy cream
Instructions
Making the Cake:
Preheat oven to 350F and prepare two 8-inch round cake pans by greasing them with butter and dusting them with flour. Set aside.
In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
In a stand mixer fitted with the whisk attachment, beat the butter and sugar on medium speed until light and fluffy, about 3-4 minutes. Add the eggs one at a time, mixing until combined before adding the next one. Add the vanilla extract and red food colouring and mix until combined.
Reduce the speed to low and add the dry ingredients in three parts, alternating with the buttermilk. Start and end with the dry ingredients, mixing just until combined. Do not overmix.
Divide the batter evenly between the two cake pans and bake for 30-35 minutes, or until a toothpick inserted into the center of the cake comes out clean. Cool the cakes in the pans for 10 minutes, then turn them out onto a wire rack to cool completely before frosting.
Making the Ganache:
Place the chocolate chips in a medium heat-safe bowl. Heat the cream in a small saucepan over medium heat until it just begins to simmer. Pour the cream over the chocolate chips and let sit for 5 minutes. Whisk until combined and smooth.
Set the ganache aside to cool and thicken.
Making the Buttercream:
In a stand mixer fitted with the whisk attachment, beat the butter on medium speed until light and fluffy, about 3-4 minutes. Add the powdered sugar one cup at a time, mixing until combined before adding the next one. Add the vanilla extract and 3 tablespoons of heavy cream and mix until combined. If the frosting is too thick, add more cream, one tablespoon at a time.
Assembling the Cake:
Place one of the cooled cakes on a cake plate or stand. Spread a layer of ganache over the top of the cake. Place the other cake on top and spread the buttercream over the top and sides of the cake. Garnish with sprinkles or other decorations, if desired.
