Instructions



In a medium-sized saucepan, heat the vegetable oil over medium heat. Once the oil is hot, add the rice and stir until it is lightly browned. Add the coconut milk, sugar, salt, garlic powder, ginger, black pepper and red pepper flakes and stir to combine. Reduce the heat to low and simmer for about 10 minutes or until the rice is tender.

Meanwhile, in a large skillet, heat the remaining oil over medium heat. Add the carrots, green onions, bell peppers and mushrooms and sauté until they are softened and lightly browned. Remove the vegetables from the heat and set aside.

Once the rice is cooked, add the vegetables and grated coconut to the pan and stir to combine. Cover the pan and cook over low heat for an additional 10 minutes.

Once the rice cake is cooked, remove the pan from the heat and allow to cool for 10 minutes before serving. Serve with steamed vegetables or a side salad. Enjoy!
