  • 1 cup butter, softened
  • 2 cups sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 ¼ cups sour cream

For the filling:

  • 2 cups lightly salted nuts (such as peanuts or walnuts)
  • 1/2 cup light brown sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt

For the frosting:

  • 3 cups confectioners' sugar
  • 1/2 cup butter, softened
  • 2 teaspoons vanilla extract
  • 5 tablespoons heavy cream

Instructions

Making the Cake

Begin by preheating your oven to 375 degrees F (190 C). Grease and flour a 9x13 inch baking pan and set aside.

In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Add the dry ingredients in three parts, alternating with the sour cream and mixing until each part is fully incorporated.

Spread the batter evenly into the prepared pan and bake for 25 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool for 10 minutes before removing from the pan and transferring to a cooling rack.

Making the Filling

In a medium bowl, combine the nuts, brown sugar, cinnamon, and salt. Mix until all of the ingredients are fully incorporated.

When the cake is cool, spread the nut mixture evenly over the top of the cake, pressing down lightly. Roll up the cake jelly-roll style, starting at one of the short ends and rolling until you reach the other.

Making the Frosting

In a large bowl, cream together the butter and confectioners' sugar until light and fluffy. Beat in the vanilla and cream, and continue beating until the frosting is light and creamy.

Spread the frosting over the top and sides of the cake, and sprinkle with a few of the remaining nuts. Serve the cake at room temperature.
