Mini Pumpkin Spice Bundt Cakes


These mini pumpkin spice bundt cakes have all the flavors of fall. They’re the perfect addition to your Thanksgiving feast, and are sure to impress your guests. The pumpkin puree and spices give them a wonderful flavor, and the cream cheese frosting is the perfect finishing touch.

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 cup butter, softened
  • 1 cup white sugar
  • 2 eggs
  • 1/2 cup canned pumpkin puree
  • 1/2 cup buttermilk
  • 1 teaspoon vanilla extract
  • Cream Cheese Frosting (optional)

Instructions:

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour 12 mini bundt pans.
  2. In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, and cloves.
  3. In a large bowl, beat the butter and sugar with an electric mixer until light and fluffy. Beat in the eggs one at a time, then stir in the pumpkin puree, buttermilk, and vanilla.
  4. Gradually beat in the dry ingredients until just combined.
  5. Spoon the batter into the prepared pans, filling each about half full. Bake for 20 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let cool for 10 minutes before turning out onto a wire rack to cool completely.
  7. If desired, frost with cream cheese frosting and decorate with sprinkles.
