Instructions:
Before you begin, preheat your oven to 350 degrees F (175 degrees C). Grease and flour a 9-inch round cake pan.
In a small saucepan, melt the butter over medium heat. Remove from the heat, and stir in the brown sugar. Pour the mixture into the prepared cake pan.
Drain the canned peaches, and arrange the slices in an even layer in the bottom of the cake pan. Reserve the syrup for later.
In a medium bowl, whisk together the flour, baking powder, and salt. In a separate large bowl, beat together the eggs and granulated sugar until combined. Beat in the vanilla extract, then gradually beat in the dry ingredients. Finally, stir in the milk.
Pour the cake batter into the cake pan, and spread it out evenly. Bake in the preheated oven for 30 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow the cake to cool in the pan for 10 minutes.
Meanwhile, pour the reserved peach syrup into a small saucepan. Heat over medium heat until the syrup begins to boil. Simmer for 3 minutes, stirring occasionally.
After the cake has cooled for 10 minutes, carefully invert it onto a serving plate. Drizzle the warm syrup over the top of the cake.
